WOW Recipe: Warm Black Bean Salad



Prep Time: 5 minutes

Cooking Time: 60 minutes

Yields: 4 servings


Ingredients:

1 can - black beans

2-3 cloves - garlic, chopped

1 - onion, diced

1 - red bell pepper

1 tablespoon - coconut oil

2 teaspoons - cumin

1 teaspoon - turmeric

1/8 teaspoon - cayenne pepper

1 - lime, juiced

1 cup - cilantro, chopped

1 teaspoon - salt

1 - avocado, cubed


Directions:

Rinse and drain beans.

Dice garlic, onion and bell pepper.

Heat a pan with coconut oil and sauté garlic, onion and bell pepper for 5 minutes or until vegetables become soft.

Add spices and cook for 2-3 minutes or until fragrant.

Add beans and cook until warm.

Place beans in a large bowl and add lime juice, cilantro and taste for salt.

Cube avocado and add to the beans.

Serve over quinoa, brown rice, a gluten free grain or over a bed of greens.

You can also add this to a salad.
