Yields: 6 servings
Ingredients:
2 pounds - chicken tenders
4 - eggs, beaten
1 ½ cups - Lisanatti brand almond garlic cheese
1 ½ cups - almond flour
½ teaspoon - onion powder
½ teaspoon - garlic powder
1 ½ teaspoons - dried thyme
3 teaspoons - dried basil
1 teaspoon - salt
½ teaspoon - black pepper
1 teaspoon - paprika
Directions:
Heat oven to 400 degrees.
Line a baking sheet with parchment paper and spray with oil. Set aside.
In a shallow bowl, mix eggs.
Shred cheese.
Place cheese, almond flour, onion powder, garlic powder, thyme, basil, salt, pepper and paprika in a large bowl and combine.
One by one, dip strips in the egg-milk mixture and dip in breadcrumb mixture.
Place on the baking sheet and cook for 40 minutes.
Serve with unsweetened ketchup or my Spicy Tomato Jam.
