Yields: 4 servings
Ingredients:
4, 6-8 ounces (1-inch thick) - Mahi mahi or Halibut
2 - limes, juiced
1 1/2 tablespoons - ginger root, minced (Ginger People brand is best)
3 tablespoons - coconut amino acids
1 teaspoon - raw honey or coconut syrup
1 tablespoon - grape seed oil
1 - lemon, sliced
salt and pepper
Directions:
Season fish with salt and pepper.
In a small bowl, whisk the lime juice, coconut aminos, honey/coconut syrup, ginger and grape seed oil. Pour marinade over fish and let it sit for 20 minutes.
Oil a skillet and heat on medium-high heat. Cook for 5 minutes on each side (skin side down) or 10 minutes per 1-inch fillet. Fish will be opaque and firm when cooked.
While the fish is cooking, heat remaining sauce in a pan for 5-6 minutes on a medium heat. Once boiling, turn off the flame. Set aside.
When your fish is done cooking, pour cooked sauce over the fish and serve with a slice of lemon and/or lime.
