Killer Chocolate Chip Cookie Recipe! (Dairy & Gluten Free! Low Gylcemic)



I love chocolate chip cookies but finding a healthy and DELICIOUS one has been impossible!

Most of the healthy cookies out there are packed with sugar, unhealthy flours, taste more like something my dog, Lucy, would enjoy and are super dry. 


I personally will not eat them, so therefore, I cannot tell you to.

Being a cookie lover, I had to fix this dilemma because my life without a GREAT chocolate chip cookie would be miserable. I challenged myself to create the perfect Haas Holistic approved chocolate chip cookie recipe for you and obviously, for myself to enjoy! 

BTW: I knew this recipe was a winner when my foodie-cookie-lover brother told me, “These are REALLY GOOD!

A Few Facts:

These are made with almond flour/meal, not a gluten grain flour, like rice flour, and are gluten free, low carb and Paleo-friendly.

The Enjoy Life Chocolate Mega Chunk Chips are dairy, nut, gluten and soy free!


Instead of butter, I use coconut oil in this recipe. Those who are lactose intolerant, like myself, are safe to enjoy every last bite of these heavenly morsels of goodness.


Almond Chocolate Chip Cookies

Prep Time:15 minutes

Cook Time: 15-17 minutes

Makes: 18-20 mini cookies

Ingredients:

3 cups               Almond meal/flour 1 teaspoon       Pink salt 1/2 teaspoon   Baking soda

2                        Organic eggs 1/3  cup            Coconut oil, melted 1/2 cup             Coconut sugar (You can also use ¼ cup maple syrup or honey) 1 teaspoon       Vanilla ¾  cup              DARK, dairy free chocolate chips

½ cup               Nuts, chopped (Optional. I like macadamia or pecans)

Directions:

Preheat oven to 375 degrees.

Line a baking sheet with parchment paper and spray with oil.

Melt Coconut oil in a pot.  Let it cool to room temp.

In another large bowl, whisk the eggs and add the coconut oil, coconut sugar and vanilla.

In a large bowl, sift the almond meal/flour, salt and baking soda.

Add the dry ingredients, 1/3 at a time, to the wet ingredients. Mix well and add the chocolate chips and nuts.

Use a spoon to drop batter onto baking sheet and bake for 15-17 minutes or until done! If you like your cookies a little softer, take them out at the 15 minute mark.
