Ingredients:
1 1/2 cups of celery, chopped
1 large bell pepper, chopped
1 red onion
2 tbs of capers (tablespoons…)
2 tbs of Sun Dried Tomato’s
1 tbs of White Wine Vinegar
1 tbs of Seasoned Rice Vinegar
1/3 cup of vegan sour cream
1 tbs of olive oil
1 - 1 1/2 cup of cooked brown rice
Directions:
Cut all vegetables into bite size pieces
Place in a large bowl
Add 1/3 cup of vegan sour cream (brand is forager)
Salt & Pepper to taste (I prefer Flamingo Estate Mixed Herb Sea Salt!)
