I prefer to cook with a BIT of this and a LOT of that.
I have I have ZERO PATIENCE, so waiting for things to bake frusterates me.
I've made plenty of healthy baked goods that taste like dog biscuits and end up in the trash.
And yet, once in a blue moon, something actually emerges from my oven that tastes BEYOND AMAZING like this BANANA CHOCOLATE CHIP WALNUT BREAD THAT IS SO GOOD YOU WILL TURN INTO A MONKEY!
BANANA CHOCOLATE CHIP WALNUT BREAD
Prep Time: 20 minutes
Cook Time: 50-60 minutes or until a toothpick comes out clean
Serves: 10-12
Ingredients:
1.5 Cups Almond flour
¼ Cup Coconut sugar
2 Teaspoons Cinnamon
1 Teaspoon Baking soda
½ Teaspoon Salt
½ Teaspoon Nutmeg
3 Eggs
1 Ripe banana, mashed
1 Cup Zucchini, shredded
½ Cup Walnuts
1/2 Cup Lily's Chocolate Chips
Directions:
Preheat oven to 350.
Combine all the dry ingredients in a bowl and set aside.
Combine all the wet ingredients in an electric mixer or by hand until well combined. Add the zucchini and mix well. Slowly, add the dry ingredients to the wet ingredients. Add walnuts and chocolate.
Grease a loaf pan and place a piece of fitted parchment paper on the bottom of the pan. This will help the loaf come out of the pan when it is cooked. Pour the batter in the pan and bake for 50-60 minutes or until a toothpick come out clean.
Remove from the oven and let it cool for 15 minutes. Remove from the loaf pan by placing a plate over the top and flipping it over.
